Functions of a bakery application lab : Product development and innovation


A bakery application lab's primary purpose is to research, develop, and test new and existing bakery ingredients, and processes.   
It acts as a hub for innovation and quality assurance
The lab fine-tunes existing recipes to enhance flavor, texture, appearance, and shelf life while keeping production costs low.
The lab evaluates the quality and performance of raw materials like flour, yeast, oils, and flavors 
Products are tested under various conditions to determine their stability and spoilage rate.
The lab resolves manufacturing or quality issues, such as problems with dough consistency or fermentation.

CANDY APPLICATION CENTRE


For soft-boiled candies like toffees and caramels, the application lab is crucial for developing formulations that balance sugar, milk, and fats to achieve the desired chewiness and flavor.
Hard-boiled candy, for instance, requires a much higher temperature to achieve a brittle texture,  soft-boiled candy needs a lower temperature to maintain its chewiness.
